Trippaio del Porcellino is a tripe cart on the edge of the Mercato Nuovo square, kept going by a family that has handed the trade down through several generations. Its lampredotto is the reason people come, and many rate it above any other in Florence. There is no written menu and nowhere to sit, and that bare setup is entirely intentional.
