Box 7 - Vinarius

Box 7 - Vinarius is a wine bar that sits inside the market on Via Aldo Manuzio and still sells its wine the old-fashioned way: bottles get filled at the tap, and what goes into them is charged per litre. At its counter the regulars have no need to place an order, since their glass is already being poured as they step in. In the middle of the day, the stools are taken over by people from the market around it, and the bar is also a stop for an aperitif.

People who live in Rome suggest coming over around lunchtime, which is when the market’s own crowd arrives and the stools along the counter fill up with them. When it comes to ordering, copy the regulars and ask for wine drawn at the tap and charged per litre, because selling wine like that, by filling bottles at the tap, is the old-fashioned habit the bar has kept going. Those regulars hardly need to say anything at all, because their glass starts filling the moment they come through the door.
