Concreto

A chef who stepped away from the stove and now works only with cold preparations runs Concreto, a wine bar in Prati. Everything happens in a small room, where the drinking centres on natural wines from Italy. Each glass is matched with small plates whose ideas come from the market, and because the kitchen does no cooking, the food arrives cold, made to sit beside the wine. A wine list exists, though the bottles open on a given night shift all the time, so the offer varies from visit to visit.

Pass over the wine list and ask what they are pouring that evening. People who live in Rome suggest it because the bottles at Concreto turn over all the time, so the list can fall behind what is actually open. The bottles in question are natural wines from Italy, poured in a small room in Prati and served beside little dishes that take their cue from the market.
