The best bakeries in Amsterdam are the neighbourhood ones. Hartog’s Volkorenbakkerij in Oost bakes dense wholegrain loaves, Rise Bakery in De Pijp does two-day sourdough, Winkel 43 in the Jordaan has the appeltaart, and Lanskroon on the Singel hands over stroopwafels warm from the iron. Add French pastry at Layers, bagels at Flo’s Deli and Greek baking at Fournos, and that’s a week of breakfasts.

Where to buy proper bread in Amsterdam
For the bread locals carry home, go to Hartog’s Volkorenbakkerij in Oost for dark wholegrain loaves, or to Rise Bakery behind the Albert Cuyp market in De Pijp, where the sourdough ferments over two days. Go to both in the morning. Hartog’s sells by weight, and its regulars turn up with cloth bags.
Hartog’s has baked for the neighbourhood for decades. In the morning the loaves are fresh out of the oven. It takes cash.

Hartog's Volkorenbakkerij
Hours: Mon–Fri 07:00–18:00 · Sat 07:00–17:00 · Sun closed
Address: Wibautstraat 77, 1091 GK Amsterdam, Netherlands
Rise was started by three partners who met in London: an Italian baker, a Brazilian chef and a South African front of house manager. Each morning the counter fills with croissants, pain au chocolat, tarts and sweet and savoury brioches. The style is French, with Italian and Spanish touches. The classic order is a sourdough loaf to take away, plus a croissant and coffee. Come before the market crowds make the door hard to reach.

Where to find the best croissants and pastries in Amsterdam
We go to Layers Bakery in De Pijp for French viennoiserie made the long way, and to Fournos on Nieuwezijds Voorburgwal for Greek baking with iced coffee. They suit different moods. Layers is built around a glass-walled kitchen. Fournos is a tiny counter, and by mid afternoon most of the morning’s bake has sold.
Layers opened in 2025 under French pastry chef Alexandre Scour. You sit on red leather benches at steel tables, with the kitchen on view behind glass. From midday the counter becomes a deli serving sandwiches, burgers and lobster rolls, so choose your hour by the half you’re after.

Layers Bakery
Hours: Mon–Sun 09:00–18:00
Address: Saenredamstraat 32, 1072 CH Amsterdam
Fournos feels more like a neighbourhood kitchen than a café. Everything in the case was baked that morning. For coffee, order a freddo espresso or freddo cappuccino, shaken over ice. Bring cash, the only payment taken. After a couple of visits the owner tends to remember your order.

Where to eat appeltaart and cake in Amsterdam
Winkel 43, a corner café on the Noordermarkt in the Jordaan, is best known for a tall, warm slice of appeltaart under a mountain of unsweetened cream. The room is plain and busy, and it draws newspaper readers as well as people who came only for the pie. For a slower lunch of cake and quiche, try De Laatste Kruimel, a small bakery café full of plants on a lane by the canals.
Go to Winkel 43 on a Monday or Saturday. The Noordermarkt is on, and the terrace fills with people watching the stalls. Order the appeltaart with slagroom (whipped cream) and stay a while.

Hours: Mon 07:00–01:00 · Tue–Thu 08:00–01:00 · Fri 08:00–02:00 · Sat 07:00–02:00 · Sun 09:00–01:00
Address: Noordermarkt 43, 1015 NA Amsterdam, Netherlands
At De Laatste Kruimel everything is baked in house and served on wooden boards. The room is cramped and fills quickly with students and locals. Quiche followed by a slice of cake is the right size of meal, and the few window seats look straight over the canal.

Hours: Mon–Thu 08:00–17:00 · Fri–Sun 08:00–18:00

Where to get a fresh stroopwafel in Amsterdam
A stroopwafel should be eaten warm, while the syrup is still soft. Two places get it right. Lanskroon is a family bakery on the Singel, and many locals name it for the best fresh stroopwafel in town. Rudi’s cart at the Albert Cuyp Market in De Pijp has pressed them the old Gouda way since 1978.
Lanskroon has a small counter to eat at and a case of Dutch pastries and cakes. It sits on a quiet stretch of canal, away from the worst crowds. Ask for one hot from the iron, and look out for the fig or honey fillings.

Lanskroon
Hours: Mon–Thu 09:00–17:00 · Fri–Sat 09:00–17:30 · Sun 10:00–17:30
Address: Singel 385, 1012 WL Amsterdam, Netherlands
Ruud learned the trade from someone who still baked the Gouda way, and he hasn’t changed the recipe since he set up at the market. His son Dennis and son-in-law Alex now run the stand on market days. Every waffle is pressed and filled while you wait. It comes out warm enough for the caramel to run a little at the first bite.

Rudi’s Original Stroopwafels
Hours: Mon 11:00–17:00 · Tue–Thu closed · Fri–Sat 11:00–17:00 · Sun closed

Where to get bagels for breakfast in Amsterdam
Flo’s Deli on Utrechtsestraat opened in 2019 as the first place in Amsterdam to hand roll and boil its own bagels. The case goes well past plain and sesame, into jalapeño cheddar and black pepper. Fillings are proper deli meats and cheese. On weekend mornings the line spills onto the pavement; weekdays are calmer.
Ask for the everything bagel with black pepper cream cheese. It isn’t always on the printed board. Most of the weekend queue is locals picking up breakfast before shopping along the street.

Flo’s Deli
Hours: Mon–Fri 08:00–15:00 · Sat–Sun 08:00–16:00
Address: Utrechtsestraat 122, 1017 VT Amsterdam, Netherlands
Bakeries run on mornings. Do the bread and pastry stops early, and save cake and stroopwafels for the afternoon. Winkel 43 is best on a Noordermarkt day. Carry some cash for Hartog’s and Fournos, and check the card for opening days before you set out.
