Forno Sartoni is a small bakery on Via dei Cerchi, a slim street just back from Palazzo Vecchio that most visitors pass without a glance. It has long fed the people who work in the historic centre, from office staff to artisans and market traders, and its schiacciata ripiena is stuffed as each order comes in, then eaten at the counter or out on the street.
The order people who live here suggest is the schiacciata ripiena with prosciutto toscano, and the right moment is lunchtime, when the bread has only just left the oven. Expect a generous portion.
