Trippa is a small trattoria in Porta Romana that gives the classic Italian format a modern, playful spin, cooking with precision and with an evident taste for offal. Dishes shift according to a menu written out by hand, among them vitello tonnato, lamb served fried and the tripe from which the restaurant takes its name. A table here has been hard to come by for years.
People who live in Milan book weeks in advance. If no reservation is available, their fallback is to arrive early and ask about the bar stools, since the staff keep some places there for walk-ins.
